this awful metallic taste in liver happens because of the iron it contains. when you cook liver, especially at high temperatures or for a long time, the heat breaks apart some of the iron rich molecules inside it. this releases tiny bits of free iron, which makes the liver disgusting.
ideally you should only cook it to rare to medium rare. cooking it less means fewer of those iron molecules break down, so the metallic taste isn’t as strong. i also like to add a squeeze of lemon and a pinch of salt to improve the taste.
