But isn't the New Testament some people re-writing stuff centuries after the Old Testament was first written? By this logic, if now I write a Newer Testament, is it also valid religious text? What authority did whoever wrote the New Testament after Jesus got killed have that I do not?
the text's origin doesn't matter, it is one of the foundations of christianity so therefore it is a religious text

can't say as i've never looked into the other sects of christianity, my parents are non-denomination christians so that's the one i am most knowledgeable about
